For all year, most of mothers provide the appropriate meal for the rest of the family, so once a year is a good time to return it by preparing some special food to celebrate and thank them for all the work done.

Start the day with some Strawberry waffles, here are the ingredients:

  • 2 ½ cups of all-purpose flour
  • 4 teaspoons of baking powder
  • ¾ teaspoon of salt
  • 2 cups of buttermilk
  • ½ cup of vanilla Greek-style yogurt
  • ½ cup of melted butter
  • 2 beaten eggs
  • 1 ½ tablespoons of white sugar
  • ¾ of a cup of chopped strawberries or more.

First, preheat and grease a waffle iron according to the product manual instruction. Meanwhile, sieve the flour, baking powder and salt together in a bowl. Beat the buttermilk, yogurt, butter, eggs and sugar in a separate bowl; once already beaten stir it into the flour until a smooth batter is obtained. Fold the strawberries into the batter.

Now, pour approximately 1/3 cup of the batter into the preheated waffle iron; cook it for around 5 to 7 minutes until it gets a brown color. Continue with the rest of the batter to make more waffles. And serve it with love.

At dinner time, creamy smoked salmon pasta is a welcome meal after a whole day of celebrating mothers’ efforts. For this pasta, the following ingredients are needed:

  • 6 tablespoon of butter
  • ½ finely cut onion
  • 2 tablespoon of all-purpose wheat flour
  • 2 teaspoons of garlic powder
  • 2 cups of skim milk
  • ½ cup of grated Roman cheese
  • 1 cup of defrosted and drained frozen green peas.
  • ½ cup of drained canned mushrooms
  • 10 ounces of sliced smoked salmon
  • 1 package of penne pasta (16 ounces approx.)

To prepare this meal, put a large pot with slightly salted water on the stove to boil. After boiling put the pasta and cook it for 8 or 10 minutes or until it is al dente, and then drains it. After that, melt the butter over medium heat in a large skillet. Cook the onion in the butter until it looks tender. Then, stir the flour and garlic powder in the butter and onion mix. Slowly put milk and leave it until boiling point, after that add cheese gradually until the sauce acquires a smooth appearance. Place the peas and mushrooms and let it on the stove for 4 minutes over low heat. Finally toss in the smoked salmon and cook it for 2 more minutes. When it is done, serve it over the pasta.

With these two meals, mothers would feel satisfy and happy to have been the recipient of a good treat for a special occasion.
